Pecorino Crotonese
Pecorino crotonese is a cheese produced with milk from the Gentile of Puglia sheep and a small percentage of goat milk in the province of crotone in Calabria and it became a cheese of protected origin only in 2014 despite its centuries-old history.

Description
The Pecorino Crotonese DOP has a tender and sweet texture, white or slightly straw-colored, the taste is firm and soft, the thin crust shows the typical signs of the basket. The semi-hard type has an intense and slightly spicy taste. At the moment of tasting, as soon as the shape is cut, there is a slight smell of sheep’s milk, harmoniously linked with other characteristic odors, such as hay, ripe field herbs, hints of hazelnut and smoke.
Gastronomy
Pecorino Crotonese DOP is mainly used as a table cheese in the fresh, semi-hard and mature versions, served with rustic bread and honey or jams suitable for pairing with cheeses. It is also used as a grater to give flavor to pasta dishes and vegetable soups. Exquisite combinations of the seasoned product with other regional specialties such as dried tomatoes, chillies in oil, red onions of Tropea Calabria IGP in oil.
Origin
Pecorino Crotonese DOP represents a constituent element of the rural area of the production area. There are testimonies of its presence in this area since very ancient times, before the Middle Ages, and documents proving the export date back to the 16th century. The production and maturing area of Pecorino Crotonese DOP includes numerous municipalities in the provinces of Crotone, in the Calabria region.
