Extra virgin olive oil of a superior category is obtained directly from the olives and only by mechanical processes. Possible sediment does not affect the quality of the product but to ensure its authenticity. The drupe, characterized by a pronounced Umbo at the top, is transformed to both the black and green; it also possesses a good size (4 kilos) and a high ratio pulp/kernel. The yield of the oil is very significant, despite having a scaling of maturation. It is resistant to cold and to Cryptogam of the oil. Among the specialties based on chili the first one place is due to 'Nduja of Spilinga, a devilish cured salami, smoked, as someone has written a "red Nutella", but instead of nuts there is pork and small amounts of fat obtained from the girth, the shoulder and the thigh of the pig and red chili dried instead of cocoa. The long tomatoes are cultivated in open fields in the month of April and May, and are manually collected in July and August. They are washed, selected, manually cut, salted and left standing on the frames of desiccation for 4 or 5 days. This is a natural technique and linked to traditions that have been transmitted to us. Immediately after, tomatoes are washed in water and vinegar and grinded together with capers and Mediterranean spices. Pâté is thus obtained and then potted. In order to obtain 1 kilogram of dried tomatoes in pâtés, it takes about 10 kilograms of fresh tomatoes. This pâté is really good to prepare delicious toasted bread or for stuffing sandwiches.
