A delightful Paté of green olives is a simple and genuine product with fruits carefully selected and collected from chosen olive groves that grow up above 600 meters over sea level. These olive groves are naturally cultivated without the use of pesticides. Once you have collected the olives are stoned, chopped and preserved with a pinch of salt. The taste is typical, succulent and light of green olives. This pâté does not contain dyes, preservatives or artificial flavorings added. This is a real gastronomic typicality from homemade taste. The creamy consistency, not too dense, makes it perfect to be used on warm toasted bread, that exalts the flavor, on croutons, sandwiches or pasta dishes. Chilli Pecorino is a cheese with a rind bearing the characteristic signs of the basket in which it is formed, it is straw-yellow in color with flakes of semi-spicy red chili pepper and with a semi-soft rind. The long tomatoes are cultivated in open fields in the month of April and May, and are manually collected in July and August. They are washed, selected, manually cut, salted and left standing on the frames of desiccation for 4 or 5 days. This is a natural technique and linked to traditions that have been transmitted to us. Immediately after, tomatoes are washed in water and vinegar and grinded together with capers and Mediterranean spices. Pâté is thus obtained and then potted. In order to obtain 1 kilogram of dried tomatoes in pâtés, it takes about 10 kilograms of fresh tomatoes. This pâté is really good to prepare delicious toasted bread or for stuffing sandwiches.
