The particular work of maturing of wine is a technique, which was used by our ancestors like a form of protection from enemies (they hid the shapes in the marc to shield them the raids), that today has become a search for quality and a way to keep the memory of tradition. The taste of this Pecorino Cheese is peculiar for the maturation of a few days that the wine must undergo. The crust is slightly rough purple color intense, the paste is ivory, compact and elastic with small holes. It is a cheese with a laying down crust and it presents characteristic signs of the basket of which it is formed. For the supply of the product it takes into account the traditional production and regular of the milk.

Chilli Pecorino is a cheese with a rind bearing the characteristic signs of the basket in which it is formed, it is straw-yellow in color with flakes of semi-spicy red chili pepper and with a semi-soft rind. The paste is compact white in color with possible holes of a very small size with the chilli flakes visible.

In the past, N'duja was used only spread on bread. Today the most famous sausage of Calabria is made also in glass jars and used in various ways, to flavor pasta, to reinforce a sauté, to give a spicy and tasty push to a plate of meat.

Milon Wine is one of the excellence of Only Good Italy. The grapes are harvested by hand only in the best period of maturation in order to guarantee the best intensity of aromas, then it is stored and pressed. The product that is obtained, with the addition of selected yeasts, is stored in tanks suitable for the maceration at 22-25°C for 10 days; when the required color is reached, everything is initiated to begin the soft pressing. At the end of the fermentation, wine is placed in containers of steel at a controlled temperature, for maturation, where it stands for about a year. A small portion of wine is left to mature in little French oak barrels for at least 6 months before to be put on the market.
