“Si nu’ babà” we say to someone when we want to convey to them all our carnal feeling, all our esteem and affection, for a person who continues to benevolently surprise us for his hidden abilities and gifts. Paradoxical, the infinite variations for a dessert that makes simplicity its most peculiar feature. The babà, in fact, is balance. Its consistency is its true secret. Its pasta is only slightly sweet, the real sweetness comes from the rum which represents its insatiable capacity for research and knowledge, the continuous sublimation of thought. It is also proposed wet with limoncello. Goodness, balance and discretion. So beware of fakes! From those not too wet, almost dry, or from those too wet, flooded with rum.
